Fish and its byproducts constitute an important source of proteins, collagen, bioactive peptides, lipids, and other compounds of interest that can be utilized through various processing technologies to obtain value-added products. However, scientific information is scattered, hindering the establishment of integrated utilization pathways with agro-industrial potential. The objective of this research was to develop a technological matrix to identify technologies used in the utilization of byproducts from selected fish species and the resulting products. To this end, a systematic literature review was conducted using the partial application of the PRISMA methodology, utilizing scientific databases and selection criteria to identify relevant studies. The species and anatomical parts used, such as skin, viscera, heads, bones, scales, cartilage, and muscle, were analyzed, in addition to the technologies, unit operations, processing conditions, and value-added products. Among the operations identified were washing, cutting, hydrolysis, extraction, separation, filtration, purification, concentration, and freeze-drying. Finally, the information was organized into a raw material-technology-product technology matrix, allowing for the establishment and comparison of technological transformation pathways. Furthermore, the Technology Readiness Level (TRL) was incorporated to evaluate the development and scalability potential of the alternatives, facilitating the identification of processes with agro-industrial applications for the comprehensive valorization of fishery resources.
