Non-Timber Forest Products (NTFPs) represent strategic resources for the transition to a circular bioeconomy. However, information on processing technologies is scattered, limiting their agro-industrial use. This study aimed to develop a matrix of raw materials, technologies, and products for the agro-industrial use of NTFPs. The methodology was based on the partial application of the 2020 PRISMA statement, supported by Bibliometrix in R, consulting Scopus and Web of Science (2 021–2 026), and analyzing trends with Google Trends. Eighteen articles were consolidated, identifying 30 raw materials and 34 final products through 52 technological pathways coded as TAG-NTFPs. Most technologies are concentrated at Technology Readiness Levels (TRLs) 3–4, indicating experimental validation, while technologies associated with food products reach TRLs 7–9. Cross-cutting operations such as extraction, milling, and drying constitute the core of the processing. The developed matrix serves as a tool for constructing value chains and opportunities for productive integration. The research originates primarily from Brazil, Mexico, Colombia, and Malaysia, while Ecuador's participation is limited, highlighting the need to strengthen local capacities to leverage its biodiversity and contribute to sustainable development.
